Custom menu for LA MER’s product launch party. The menu was the result of serious trial and error. Being tasked with creating food that represented both LA MER and Blood, Sweat, and Butter, we set out to incorporate their colors and the “clean” directive they wanted while maintaining an element of surprise. A bit of the menu R+D process in creating a savory and sweet dish below.
We arrived at the savory spinach and leek panna cotta; first being enchanted with the milky green color still needing to figure out the presentation. After pyramids and domes, many a cracker and some failures, we found our final iteration: served on a charcoal crisp with toasted black sesame.
For the dessert, we landed on a tart bergamot lime + mint sorbet, served in matcha-marbled white chocolate shells.
